Bourbon Honey Orange Cheesecake Recipe

Ingredients

Crust:

2 cups slivered Almonds

¼ cup sugar

¼ cup butter (unsalted)

Filling:

2 pounds cream cheese (softened)

¾ cup honey

½ cup bourbon

1 tablespoon orange zest

3 tablespoons cornstarch

3 large eggs (room temperature)

Topping:

¾ cup sugar

2 ounces water

½ cup silvered almonds

Directions

For Crust:

Grind almonds and sugar in a food processor.

Melt butter in small pot then combine with almond sugar mixture

Press crust mixture into a 16” spring form pan

For Filling

Whip cream cheese until light and fluffy add honey, orange zest and cornstarch, adding one egg at a time, mix until incorporated,

For topping:

mix sugar and water in a small pot and cook over medium heat until carmalized (Stirring continuously)

Add almonds and pour onto a sheet pan and let sit until cool.

Break and grind topping.

Pour cheesecake filling into spring form pan.

Bake in a water bath at 300° F for one hour.

Sprinkle with ground almond & sugar topping mixture.

Let cool before serving.
