How to make it

  • For Crust:
  • Grind almonds and sugar in a food processor.
  • Melt butter in small pot then combine with almond sugar mixture
  • Press crust mixture into a 16” spring form pan
  • For Filling
  • Whip cream cheese until light and fluffy add honey, orange zest and cornstarch, adding one egg at a time, mix until incorporated,
  • For topping:
  • mix sugar and water in a small pot and cook over medium heat until carmalized (Stirring continuously)
  • Add almonds and pour onto a sheet pan and let sit until cool.
  • Break and grind topping.
  • Pour cheesecake filling into spring form pan.
  • Bake in a water bath at 300° F for one hour.
  • Sprinkle with ground almond & sugar topping mixture.
  • Let cool before serving.
