  • INGREDIENTS:
  • 2 TBLES BUTTER OR OLIVE OIL
  • 1 POUND LARGE MUSHROOMS COARSELY CHOPPED
  • 1/3 CUP CHOPPED GREEN ONION (SCALLION)
  • 1 OR 2 MINCED GARLIC CLOVES
  • 1/2 CUP WHITE WINE OR CHICKEN BROTH
  • 1 WHOLE BAY LEAF
  • 1/2 TEAS. WORCESTERSHIRE SAUCE
  • 1/2 TSP BASIL
  • 1/2 TSP OREGANO
  • 1/2 TSP SALT
  • 12 OUNCE LINGUINI COOKED AND DRAINED (REFRIG SECTION)
  • 3/4 CUP GRATED CHEESE
  • 1/4 CUP CHOPPED FINE PARSLEY

Directions
  1. IN A LARGE FRY PAN OVER MEDIUM HIGH HEAT, HEAT OLIVE OIL(HEAT PAN FIRST)
  2. ADD MUSHROOM, ONION AND MINCED GARLIC
  3. SAUTE UNTIL MUSHROOMS RELEASE JUICES AND GARLIC IS SOFT(3 MIN).
  4. STIR IN WINE
  5. ADD BAY LEAF AND W. SAUCE,BASIL OREGANO AND SALT
  6. SIMMER 10 MINUTES
  7. REMOVE BAY LEAF
  8. POUR SAUCE OVER HOT PASTA AND FOLD
  9. TOP WITH GRATED CHEESE AND PARSLEY.

I cooked this last night - Very good and easy. I had to improvise a little...I can't believe I'm out of bay leaves!! I only used about 1/2 pound of baby bella mushrooms and I left them whole so I didn't waste any on my mushroom hating kiddo. I put in some shrimp tails and steamed broccoli too. I topped it w/ a light gouda cheese and a little parm. Really tasty! The wine sauce was wonderful and simple! Thanks dear!
