Shrimp And Penne Plus Recipe
Threw this all together one night when I was feeling creative. Iit came out fabulous!

Ingredients
  • 24 shrimp, fresh or frozen, deveined and tails removed
  • 2 red peppers, sliced into strips then cut into 1/2-inch cubes
  • 1 package triple-washed spinach
  • 1 package dried sun-dried tomatoes, rehydrated and cut into small pieces
  • 3 cloves garlic, minced
  • 1-1/2 tablespoons fresh lemon juice
  • White wine
  • 1 tablespoon olive oil
  • 1 pound penne, cooked and drained, kept warm
  • Asiago Cheese

Directions
  1. Cook pasta according to package directions, drain and keep warm.
  2. In a skillet over low heat, add olive oil and about 1 tablespoon of garlic.
  3. Add peppers and turn heat to medium.
  4. After 2 minutes, add sun-dried tomatoes and sauté for 5 minutes.
  5. You don't want the tomatoes "mushy", just tender.
  6. Add spinach, lemon juice and remaining garlic.
  7. Sauté until the spinach is completely wilted.
  8. Add shrimp and hit it with a splash, or 2, of white wine.
  9. Cook 3 minutes.
  10. Toss with cooked pasta and garnish with shaved Asiago Cheese.
  11. Serve with a salad and crusty bread.

I was just "stumbling" looking for a shrimp recipe where I had all the ingredients on hand - this sounds terrific. It's my choice for tonight.
