Ingredients

How to make it

  • Cook pasta according to package directions, drain and keep warm.
  • In a skillet over low heat, add olive oil and about 1 tablespoon of garlic.
  • Add peppers and turn heat to medium.
  • After 2 minutes, add sun-dried tomatoes and sauté for 5 minutes.
  • You don't want the tomatoes "mushy", just tender.
  • Add spinach, lemon juice and remaining garlic.
  • Sauté until the spinach is completely wilted.
  • Add shrimp and hit it with a splash, or 2, of white wine.
  • Cook 3 minutes.
  • Toss with cooked pasta and garnish with shaved Asiago Cheese.
  • Serve with a salad and crusty bread.

    I was just "stumbling" looking for a shrimp recipe where I had all the ingredients on hand - this sounds terrific. It's my choice for tonight.
