Shrimp and Penne Plus

- 24 shrimp, fresh or frozen, deveined and tails removed shopping list
- 2 red peppers, sliced into strips then cut into 1/2-inch cubes shopping list
- 1 package triple-washed spinach shopping list
- 1 package dried sun-dried tomatoes, rehydrated and cut into small pieces shopping list
- 3 cloves garlic, minced shopping list
- 1-1/2 tablespoons fresh lemon juice shopping list
- White wine shopping list
- 1 tablespoon olive oil shopping list
- 1 pound penne, cooked and drained, kept warm shopping list
- asiago cheese shopping list
How to make it
- Cook pasta according to package directions, drain and keep warm.
- In a skillet over low heat, add olive oil and about 1 tablespoon of garlic.
- Add peppers and turn heat to medium.
- After 2 minutes, add sun-dried tomatoes and sauté for 5 minutes.
- You don't want the tomatoes "mushy", just tender.
- Add spinach, lemon juice and remaining garlic.
- Sauté until the spinach is completely wilted.
- Add shrimp and hit it with a splash, or 2, of white wine.
- Cook 3 minutes.
- Toss with cooked pasta and garnish with shaved Asiago Cheese.
- Serve with a salad and crusty bread.
