How to make it

  • Combine the marinade ingredients and mix well. Marinate Kalbi in a sealed plastic bag in the refrigerator for 4-5 hours, turning occasionally. Grill Kalbi slices over a medium charcoal fire about 3 minutes per side. Utilize hickory chips soaked for about 25 minutes for smoke. This can also be made on an indoor grill.

    I think this can be made with pork too. The pork tenderloin would be sliced thicker than the short ribs, so I would marinate it longer, perhaps 8-10 hours. Also, I would add a little fruit flavoring, perhaps a 1/2 c. of apple cider.

    Okay, I'm back. I'm thinking of doing this tomorrow on my outdoor grill. We're having straight-line winds today of about 25-30 mph and gusts up to 35-40 mph. I think there will be no outdoor grilling today for me. Could I marinate this overnight or would that be too long? Thanks in advance...I really love Korean foods and flavors, too.
