An easy dish after a long day's work. To me, this is the ultimate comfort food! The name comes from the three main ingredients all starting with a 'P' in italian: panna (cream), pepe (pepper) and pesto.

Ingredients
  • 1 bag/packet fresh tortellini, we like the ones with ham filling
  • 1 small cup of sour cream (125 ml)
  • very generous amount of pepper
  • 2 tsp pesto
  • ca 100 ml cooking water

Directions
  1. Boil the tortellini in a large pan of generously salted water. Keep trying them every now and then and when they're almost finished, take out about 100 ml of the cooking water. Mix this with the sour cream, pepper and pesto. Don't worry if it looks way too runny at this stage.
  2. Drain off the tortellini in a colander and put them back in the pan.
  3. Stir in the cream sauce. The tortellini will absorb most of the liquid, leaving a soft creamy layer all around them.
  4. Serve with a nice salad on the side.
  5. Leftovers are also nice the next day for lunch, even cold.

It really is easy. It looks sooo simple, but tastes wonderfull. And only one dirty pan to clean afterwards, that's good too!
