Tortellini Tre Pi

- 1 bag/packet fresh tortellini, we like the ones with ham filling shopping list
- 1 small cup of sour cream (125 ml) shopping list
- very generous amount of pepper shopping list
- 2 tsp pesto shopping list
- ca 100 ml cooking water shopping list
How to make it
- Boil the tortellini in a large pan of generously salted water. Keep trying them every now and then and when they're almost finished, take out about 100 ml of the cooking water. Mix this with the sour cream, pepper and pesto. Don't worry if it looks way too runny at this stage.
- Drain off the tortellini in a colander and put them back in the pan.
- Stir in the cream sauce. The tortellini will absorb most of the liquid, leaving a soft creamy layer all around them.
- Serve with a nice salad on the side.
- Leftovers are also nice the next day for lunch, even cold.
