Ingredients

MICROWAVE LEMON CHEESE

2/3 Cup lemon juice

3Tbsp.grated lemon rind

2 cups Sugar

1 Cup Unsalted Butter

4 Eggs

Directions

WATCH FOR BOILING AND REDUCE POWER IF EDGES START TO BUBBLE

Mix Juice,Rind and Sugar in 2quart casserole.

Add Butter,cover with wax paper and mic on high for 41/2 -5 mins whisking after 2 mins,till butter melts and Sugar dissolves:-Whisk again,

Beat Eggs till frothy, blend in about 1/2 cup hot lemon mix-Stir back into casserole and whisk well,Cover with wax paper and mic on MED (50%power) 41/2 -5mins whisking every two mins or so till thick .
