This recipe looks SO worth the effort. I have a nice acorn squash lasagna recipe, but it is pretty basic (read: boring). *This* recipe is much more interesting with its complexity of flavors: the spicy tomato sauce, creamy bechamel sauce, and the fresh spinach. I'm pleased to note that only 1/2 cup of red wine is required for the tomato sauce, as it leaves the *rest* of the bottle for cook! LOL
