Black Estate Icicle Pickles Recipe
This fabulous recipe comes from the Black Estate in Rowlett, Texas. I have not made these but one of my best friends have and they are very good. Enjoy

Ingredients
  • 3 pounds pickling cucumbers
  • 7 small onions peeled and quartered
  • 7 celery pieces
  • 1 tablespoon mustard seed
  • 4 cups white vinegar
  • 2-1/2 cups granulated sugar
  • 1/4 cup pickling salt
  • 1 cup water

Directions
  1. Wash cucumbers then cut lengthwise into eighths.
  2. Soak in ice water 3 hours then drain and pack into clean jars.
  3. Add 1 onion, 1 piece celery and 1/2 teaspoon mustard seed to each jar.
  4. Combine vinegar and remaining ingredients then heat to boiling.
  5. Pour vinegar solution over cucumbers to within 1/2 inch of top making sure vinegar solution covers cucumbers.
  6. Cap each jar at once then process 10 minutes in boiling water bath.
