Oyster Fritters With Lemon Mustard Mayonnaise Recipe


OYSTER FRITTERS WITH LEMON MUSTARD MAYONNAISE Recipe
This is a delicious change for oyster lovers. Even non oyster lovers usually try this one and like it. A little bit of work but worth it.

Ingredients
  • 24 oysters
  • 2 tablespoons lemon juice
  • 2 tablespoons plain flour
  • 2 tablespoons S R Flour
  • ¼ teaspoon bicarb soda
  • ½ cup water
  • 1 egg white
  • oil for deep frying

Directions
  1. Combine oysters and lemon juice in bowl, stand for 15 minutes; drain well.
  2. Sift flours and soda into medium bowl, gradually stir in water; mix to a smooth batter (up to this stage can be done in a blender or processor). Beat egg white in small bowl until soft peaks form, gently fold into batter. Dip oysters into batter, deep-fry a few at a time in hot oil until golden brown. Drain on absorbent paper. Keep cooked oysters warm while frying remaining oysters. Serve with mayonnaise.

  4. Combine all ingredients in small bowl. Serves 4

So sorry the mustard mayonnaise ingredients didn't show. They are as follows:
LEMON MUSTARD MAYONNAISE

¾ cup mayonnaise
2 green shallots, chopped
2 tablespoons chopped fresh parsley
½ tsp grated lemon rind
1 tablespoon lemon juice
1 teaspoon seeded mustard


SUGGEST THAT YOU USE REAL OYSTERS FROM NEW ZEALAND THEY ARE THE BEST WE HAVE EVER HAD WORLD WIDE A GREAT POST THANK YOU

Thanks for your comment Pops. I don't think we can get them from New Zealand here in Adelaide, but we do get some really nice fresh Sydney rock oysters and a couple of others fresh just out of Adelaide at times. (They may be farmed I think, but taste pretty good)

I grew up eating Oyster Fritters .... our Oysters were Chincoteague Oysters from Chincoteague Island, Virginia ...... this recipe brings back loads of memories!!!
