LEMON MUSTARD MAYONNAISE
¾ cup mayonnaise
2 green shallots, chopped
2 tablespoons chopped fresh parsley
½ tsp grated lemon rind
1 tablespoon lemon juice
1 teaspoon seeded mustard

Thanks for your comment Pops. I don't think we can get them from New Zealand here in Adelaide, but we do get some really nice fresh Sydney rock oysters and a couple of others fresh just out of Adelaide at times. (They may be farmed I think, but taste pretty good)

I grew up eating Oyster Fritters .... our Oysters were Chincoteague Oysters from Chincoteague Island, Virginia ...... this recipe brings back loads of memories!!!
