Pecans In A Cloud Pie Recipe
This is a heavenly pie.....PECANS in meringue, with a surprise ingredient! SO EASY...top with whipped cream, lemon sauce, praline sauce, ice cream, strawberries, or you name it!!

Ingredients
  • 3 egg whites
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 1 cup pecans, chopped
  • 24 Ritz crackers crushed

Directions
  1. Beat egg whites until frothy
  2. Mix sugar with baking powder
  3. Add gradually to egg whites while beating
  4. Continue to beat until high peaks form
  5. Add vanilla, just until mixed
  6. FOLD in crushed crackers and pecans
  7. Pour into a 9 inch pie plate (makes its own crust)
  8. Bake 30 minutes in a 350 degree oven
  9. TOP with whipped cream, or your choice of topping
  10. DELICIOUS!!

I'm a long time meringue baker and the surprise of the ritz cracker, adding just that touch of salt is marvelous. What a great idea. Check out Mincemeat Meringue pie and Lemon Angel pie. I think you'll like them a lot. Do you do meringue cookies too? My stepmom used to make the best ones with Cap'n Crunch and mini choc chips. Love this recipe, great post.
