Ingredients

How to make it

  • Beat egg whites until frothy
  • Mix sugar with baking powder
  • Add gradually to egg whites while beating
  • Continue to beat until high peaks form
  • Add vanilla, just until mixed
  • FOLD in crushed crackers and pecans
  • Pour into a 9 inch pie plate (makes its own crust)
  • Bake 30 minutes in a 350 degree oven
  • TOP with whipped cream, or your choice of topping
  • DELICIOUS!!

    I'm a long time meringue baker and the surprise of the ritz cracker, adding just that touch of salt is marvelous. What a great idea. Check out Mincemeat Meringue pie and Lemon Angel pie. I think you'll like them a lot. Do you do meringue cookies too? My stepmom used to make the best ones with Cap'n Crunch and mini choc chips. Love this recipe, great post.
