Ingredients
  • 1 9" pie shell, unbaked
  • 1 1/2 c sugar
  • 2 Tbsp white cornmeal
  • 1 Tbsp all-purpose flour
  • 4 eggs, room temperature
  • 4 Tbsp melted butter, slightly cooled
  • 1/4 cup milk
  • 1 lemon's rind
  • 1 lemon's juice
  • confectioner's sugar

Directions
  1. Place crust in a lightly greased pie pan, create a pretty fluted edge
  2. Whisk the other ingredients together in a bowl and pour into the pie shell
  3. Bake at 325 for 45 minutes
  4. When cooled to room temperature sprinkle on the confectioner's sugar as a garnish
  5. This can be served at room temperature or chilled

I've been looking for a recipe that is similar to Lemon Bars - this looks great!


Sunny - you are correct. This pie gives that same intense lemon flavor and smooth custard texture. Sprinkle a little confectioner's sugar on just before serving and it will be beautiful and delicious... and shamelessly easy.
