Midnight Suns Lemon Chess Pie

This is a favorite of family and friends. It has a smooth texture and is light and fresh-flavored
Ingredients
- 1 9" pie shell, unbaked shopping list
- 1 1/2 c sugar shopping list
- 2 Tbsp white cornmeal shopping list
- 1 Tbsp all-purpose flour shopping list
- 4 eggs, room temperature shopping list
- 4 Tbsp melted butter, slightly cooled shopping list
- 1/4 cup milk shopping list
- 1 lemon's rind shopping list
- 1 lemon's juice shopping list
- confectioner's sugar shopping list
How to make it
- Place crust in a lightly greased pie pan, create a pretty fluted edge
- Whisk the other ingredients together in a bowl and pour into the pie shell
- Bake at 325 for 45 minutes
- When cooled to room temperature sprinkle on the confectioner's sugar as a garnish
- This can be served at room temperature or chilled
