A spicy yellow fish curry that's great served over jasmine or basmati rice. Coconut and tomatoes make a delicious velvety sauce.

Ingredients
  • 1 teaspoon vegetable oil
  • 3 medium white onions, diced
  • 5 garlic cloves, crushed
  • 1 tablespoon grated fresh ginger
  • 1 Thai chile, chopped finely
  • 2 teaspoons ground turmeric
  • 1 teaspoon paprika
  • 2 teaspoons cumin
  • 2 cans crushed tomatoes
  • 1 can tomato paste
  • 2 lbs cod or haddock fillets, cut into 1” pieces
  • ½ cup coconut cream
  • ¼ cup fresh coriander, loosely packed and finely chopped
  • 1 tablespoon fresh mint, finely chopped

Directions
  1. Heat oil in a large pan, and cook onion, garlic, ginger, chilli and spices until onion softens.
  2. Add crushed tomatoes to onion mixture, season to taste and bring to boil.
  3. Reduce heat, simmer, uncovered about 10 minutes or until sauce thickens slightly.
  4. Add tomato paste and stir to blend.
  5. Stir in fish and coconut cream, bring to boil.
  6. Reduce heat and simmer, covered, about 10 minutes.
  7. Just before serving, stir in coriander and mint.

This was great. We used lite coconut milk instead of coconut cream to keep the WeightWatchers points down and the fish we had available was Tilapia. Thanks for a great recipe.
