Ingredients
  • 2 pork tenderloins, about 12 ounces each
  • 1/3 cup reduced-calorie Italian dressing
  • 1 tsp. vegetable oil
  • 2 medium tomatoes, seeded and diced
  • 1 bag ( 10 ounces) fresh spinach,washed and trimmed
  • 3 ( 6- in. ) pieces French bread, split lengthwise in half
  • 6 tsp. grated Parmesan cheese

Directions
  1. Cut pork into slices 1/4 in. thick/
  2. Place pork in plastic bag; add dressing, turning to coat
  3. Tie bag securely and marinate at least 15 min. ( no longer than 11/2 hrs.)
  4. Remove pork from marinade.
  5. Brown pork in oil in nonstick skillet: pour off drippings
  6. Add tomatoes and spinach
  7. Cover tightly and cook over medium-high heat 2 to 3 min. or until spinach is wilted
  8. Pour off liquid
  9. Meanwhile remove soft centers from bread to form "boats"
  10. Spoon 1 cup pork mixture into each boat
  11. Sprinkle each with equal amount of cheese
  12. Serves 6

Sounds Good! But as a Frenchman once told me "the fatter, the better" so I will use a full bodied Italian dressing


Sounds good but i hate cooked spinach ...i wonder how it would be if you just layered on the spinach like lettuce on a sandwich ? well at any rate it sounds good to me !
