How to make it

  • Combine quinoa and 2 cups of water in a medium saucepan.
  • Set pan over high heat and bring to a boil. Reduce heat to low, cover and cook 10 minutes until liquid is absorbed and quinoa is translucent.
  • In a separate large pan, saute peppers, shrimp, cilantro, onions, vinegar and oil until hot.
  • Stir in quinoa. Season to taste with salt and pepper (or garlic powder).

    Sounds good- I just started cooking with quinoa- I will have to give it a try- though minus the cilantro!
