Sesame Quinoa Shrimp Salad

- 1 cup uncooked quinoa shopping list
- 1 pound cooked medium shrimp, peeled and deveined shopping list
- 1 yellow or red bell pepper, seeded and diced (I usually use one of each for extra veggies!) shopping list
- 3 tablespoons chopped fresh cilantro shopping list
- 2 green onions, minced shopping list
- 2 tablespoons rice wine vinegar shopping list
- 1 tablespoons sesame oil shopping list
- salt and ground black pepper shopping list
How to make it
- Combine quinoa and 2 cups of water in a medium saucepan.
- Set pan over high heat and bring to a boil. Reduce heat to low, cover and cook 10 minutes until liquid is absorbed and quinoa is translucent.
- In a separate large pan, saute peppers, shrimp, cilantro, onions, vinegar and oil until hot.
- Stir in quinoa. Season to taste with salt and pepper (or garlic powder).
