- 1 cup chopped onion shopping list
- 1 cup chopped green bell pepper shopping list
- 2 teaspoons chopped garlic shopping list
- 2 teaspoons ground cumin shopping list
- 1 teaspoon dried thyme leaves shopping list
- 1/2 teaspoon crushed red pepper shopping list
- 1 bay leaf shopping list
- 1 Tablespoon olive oil shopping list
- 1 cup rice shopping list
- 1 can (14-1/2 ounces) diced tomatoes with green chilies shopping list
- 2 cans (15 ounces) black beans shopping list
- 2 cups water shopping list
- 1 Tablespoon apple cider vinegar shopping list
- 1/2 teaspoon salt (optional) shopping list
- 1/2 teaspoon black pepper shopping list
How to make it
- Saute onion, bell pepper, garlic, cumin, thyme, crushed red pepper, and bay leaf in olive oil until onion is tender, about 5 minutes.
- Stir in rice, tomatoes, black beans, water, vinegar, salt, and pepper
- Heat to boiling. Reduce heat and simmer, covered, until rice is tender, about 20 minutes. Let stand 5 minutes before serving.
- I like chopped fresh onions as the garnish and maybe some cilantro leaves chopped up quite fine. Don't skip the vinegar, it adds so much to the dish.

Mmm this is one of my favourite dishes, except I use brown rice for the nutrition boost. Sometimes I throw in some barley too. Tasty any way, I say!
