How to make it

  • Saute onion, bell pepper, garlic, cumin, thyme, crushed red pepper, and bay leaf in olive oil until onion is tender, about 5 minutes.
  • Stir in rice, tomatoes, black beans, water, vinegar, salt, and pepper
  • Heat to boiling. Reduce heat and simmer, covered, until rice is tender, about 20 minutes. Let stand 5 minutes before serving.
  • I like chopped fresh onions as the garnish and maybe some cilantro leaves chopped up quite fine. Don't skip the vinegar, it adds so much to the dish.

    Mmm this is one of my favourite dishes, except I use brown rice for the nutrition boost. Sometimes I throw in some barley too. Tasty any way, I say!

    I think I will serve this the next time with my Roast Pork Crusted in Adobo! I usually make rice with thyme, cranberry beans, or black beans. But this will be a wonderful change. Thanks for posting!
