This cake is quick, easy, and the perfect way to use up some fresh picked apples and/or as a perfect ending for any big Oktoberfest meal. It is so good, you will want to make it anytime you can get good apples!

Ingredients
  • 2 eggs
  • 3/4 cup vegetable oil
  • 2 cups sugar
  • 1 teaspoon vanilla
  • 2 cups flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 cups peeled chopped apples

Directions
  1. In large bowl, beat eggs and oil until smooth.
  2. Add next 6 ingredients and mix well.
  3. Fold in apples.
  4. Pour into greased 9 x 13 pan.
  5. Bake at 350F degrees for 50-55 minutes.

This sounds like a great version of Fresh Apple Cake..other recipes I've tried have so much oil in them - this one sounds just right! Was just telling my fiance I'd make him an apple cake soon...so you posted this one at the perfect time! Thanks Lor!

Good fall cake, sounds good, sometimes I put nuts and chocolate chips in mine, few extra calories I know but yummie nonetheless :)

Delicious!!!!!! Especially fresh out of the oven! Could a person use whole wheat flour rather than white? Half and half?


This recipe is like the one I use for Fresh apple cake..which is very good and moist!I use a bundt
cake pan..
