Miss Marys Texas Pie Recipe

Ingredients

3/4 stick unsalted butter, melted

3 eggs

3 tablespoons flour

1-1/2 cups sugar

1 cup crushed pineapple, drained

1 cup coconut

1 9 inch unbaked pie shell

Directions

Beat eggs slightly

Add sugar to eggs, whisk slightly

Add flour, stir

Add melted butter, whisk slightly

Add pineapple and coconut, stir

Pour into pie shell

Bake at 35O degrees until set and lightly browned

NOTE: Mrs. Mitchell was a lovely lady and a wonderful cook. She was known for this pie!.
