A cool summer salad with a sweet oriental taste. This came from an old friend over thirty years ago. It is quick and easy. Use whatever salad green you prefer. The tastes come from the dressing.

Ingredients
  • 3/8 cup chopped almonds
  • 1 5/8 tablespoons sugar
  • 3/8 head lettuce, torn
  • 3/4 cup celery, chopped
  • 1/4 cup green onion, sliced
  • 3/4 can mandarin orange, drained
  • 2 3/8 tablespoons vinegar
  • 2 3/8 tablespoons sugar
  • 1/4 cup cooking oil
  • 3/4 tablespoon fresh parsley, chopped

Directions
  1. Cook almonds and 2 tbsp of sugar in a heavy pan until sugar is melted. Poor onto aluminum foil to cool and harden. Break into pea sized chunks.
  2. Toss together lettuce, celery, green onions and mandarin oranges.
  3. Dressing: Combine vinegar, 3 tbsp sugar, parsley and oil in a jar or cruet.
  4. When ready to serve, add almond chunks and dressing.

Sounds yummy to me, for some reason I just love salads with fruit and nuts in them.


Sounds great! but i am not sure if almonds, celery and parsley are typical ingredients of a korean dish. (especially 30 years ago) so i am a bit confused...


They aren't. I'm not sure where the name originated. It was a recipe from a friend of a friend of a...etc. The name just stuck. Maybe I should come up with a new title but then no one in my family would know what I am talking about.
