How to make it

  • Blend crust ingredients until crumbly
  • Pack into greased 9-inch square pan
  • Bake at 350 degrees for 15 minutes
  • In covered saucepan simmer dried apricots in water to cover for 15 minutes; drain and chop (can do this ahead)
  • Combine filling ingredients
  • Beat until mixed
  • Pour over crust and bake 30 minutes longer
  • Cool
  • Dust with powdered sugar and cut into squares or triangles
  • Makes 16 squares
