Apricot Bars Recipe
Apricot lovers, these are the best bars! They are easy to make, and they are lovely when cut, dusted with powdered sugar and placed on a tray!! Great for dessert, brunches, teas, showers, etc..

Ingredients
  • CRUST:
  • 1/2 cup unsalted butter
  • 1/4 cup sugar
  • 1 cup flour
  • FILLING:
  • 1 (8 ounce) pkg dried apricots
  • 2 eggs, beaten
  • 1 cup light brown sugar, packed
  • 1/3 cup flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1/2 cup chopped nuts (I use pecans)

Directions
  1. Blend crust ingredients until crumbly
  2. Pack into greased 9-inch square pan
  3. Bake at 350 degrees for 15 minutes
  4. In covered saucepan simmer dried apricots in water to cover for 15 minutes; drain and chop (can do this ahead)
  5. Combine filling ingredients
  6. Beat until mixed
  7. Pour over crust and bake 30 minutes longer
  8. Cool
  9. Dust with powdered sugar and cut into squares or triangles
  10. Makes 16 squares

Great dessert, but a little too rich. I'll cut the brown sugar down just a bit next time around.
