Leek Soup Recipe
DELICIOUS served with a salad and rolls makes for a satisfying meal.

Ingredients
  • 6 leeks, white part only, cut into thin rounds
  • 1 white onion, sliced
  • 1/4 c. butter or margarine
  • 6 potatoes, peeled and sliced
  • 6 c. chicken bouillon
  • 1/2 c. chopped parsley
  • 1 egg yolk, beaten
  • salt and pepper
  • Dash of Nutmeg
  • 2 c. light cream
  • crumbled crisp bacon

Directions
  1. Saute' leeks and onions in butter until soft but not brown
  2. Add potatoes, bouillon and parsley, simmer until vegetables are soft
  3. Strain and sieve vegetables, leaving them a puree' consistency, and return to broth
  4. Add some broth to the beaten egg, mix well
  5. Add egg to broth with seasoning
  6. Add cream and reheat but do not boil
  7. Garnish with crumbled bacon
  8. * Serve with a salad and rolls for a wholesome meal

This sounds good.. I love leek soup but don't have a good recipe for it.. will try it when the weather gets cooler.


I love leek soup and I love potato soup, so this would make me very very happy.


I made this soup and everyone I served it to, and I, LOVED it. I used 35% cream because my grocery shopper did not appreciate the difference between light and high fat cream, but that certainly didn't hinder the taste. Don't forget the bacon, it's so good!


My wife and I make a soup -once a week even in the summer. this was a keeper
