How to make it

  • Preheat oven to350.F
  • Cover apricots with water. Simmer for 10 minutes. Drain.
  • Mix together flour, 1cup powdered sugar. Cut in butter, making a crumbly mixture. Press into an 8 or 9 inch square pan.
  • Bake for 20 minutes at 350.F
  • In mixing bowl, Beat eggs until creamy. Beat in sugar, lemon juice and lemon rind.
  • Combine flour and baking powder. Add to egg mixture.
  • Chop apricots and fold into batter. Pour mixture over baked crust. Bake at 350.F for 25 minutes or until mixture is set. Remove pan from oven, cool. Cut into 24 bars.
  • Dust with powdered sugar, if desired.

    Hello there,
    I just found this recipe by doing a search on CA on here. I have some apricots in the pantry and also a bunch of Lemon Pie Filling that I sort of "inherited" & have been wondering what to do with it.
    I'll just rehydrate the apricots and then add them to the filling already prepared.
    The brand I have is Mussellman's.

    Yum,girl...these look great ! I love me some apricots. I used to hoard my momma's dried apricots and hide them behind the pots and pans she never used and get one out every now and then.
    I love dried fruit. Yeah, I know...I was a weird kid. lol !
