An unusual earthy flavoured chicken dish goes well with rice, egg noodles, or even mashed potatoes. I created it during one of my fridge forays. I prefer it with a side of steamed Brussel Sprouts and blue cheese dressing (shown).

Ingredients
  • 2 lbs boneless skinless chicken breasts cubed
  • cornstarch
  • olive oil
  • salt
  • pepper
  • large onion chopped or thinly sliced
  • 10 oz baby portobello mushrooms sliced
  • 1/2 teaspoon dry rosemary crushed
  • white wine (dry)
  • 2 Tbspn butter

Directions
  1. Dust chicken cubes in cornstarch
  2. saute on high in olive oil until browned
  3. add onion, mushrooms, rosemary, 1/2 cup wine, salt and pepper, butter
  4. turn heat down to medium, cover, cook for 15 mts or until veg tender
  5. add more liquid as necessary for amount of gravy you desire
  6. thicken to your liking with cornstarch and water if needed
  7. goes well with rice, egg noodles, mashed potatoes
