Brazilian Shrimp and Rice

- 1 can (14 oz) lite coconut milk shopping list
- 2 medium onions, halved lengthwise, thinly sliced crosswise shopping list
- 1 Tbsp minced garlic shopping list
- 1 box (8 oz) yellow rice mix shopping list
- 2 cups frozen green peas shopping list
- 2⁄3 cup water shopping list
- 1 lb raw medium shrimp, shelled and deveined shopping list
- 1⁄4 cup chopped fresh cilantro shopping list
- 3 Tbsp fresh lime juice shopping list
- Garnish: lime wedges shopping list
How to make it
- Heat coconut milk in a large nonstick skillet over medium-high heat. Add onions and garlic, reduce heat, cover and simmer 3 minutes or until onions are crisp-tender.
- Stir in rice mix, frozen peas and water.
- Cover and simmer 15 minutes or until almost all liquid is absorbed and the rice is firm-tender.
- Stir in shrimp, cover and simmer 5 to 6 minutes, stirring once or twice, until shrimp are opaque in center.
- Stir in cilantro and lime juice.
- Garnish with lime wedges.
- TIP: Serve with a green salad and pass a bottle of hot-pepper sauce at the table.

YUMMMMMY! My husband even gave me the nod to make it again. I served it with Emeril's yellow rice recipe on the food network since I didn't have any yellow rice mix available.
