How to make it

  • Heat coconut milk in a large nonstick skillet over medium-high heat. Add onions and garlic, reduce heat, cover and simmer 3 minutes or until onions are crisp-tender.
  • Stir in rice mix, frozen peas and water.
  • Cover and simmer 15 minutes or until almost all liquid is absorbed and the rice is firm-tender.
  • Stir in shrimp, cover and simmer 5 to 6 minutes, stirring once or twice, until shrimp are opaque in center.
  • Stir in cilantro and lime juice.
  • Garnish with lime wedges.
  • TIP: Serve with a green salad and pass a bottle of hot-pepper sauce at the table.

    YUMMMMMY! My husband even gave me the nod to make it again. I served it with Emeril's yellow rice recipe on the food network since I didn't have any yellow rice mix available.
