Ingredients
  • One lb. of Pasta (spaghetti or penne)
  • 3 tablespoons of Olive oil
  • 2 - 3 Cloves of Garlic
  • 1 can of Italian Plum tomatoes
  • 16 black olives (gaeta or greek kalamata)
  • 2 tablespoons of capers
  • 6 pieces of anchovies (chopped)
  • minced parsely on top

Directions
  1. To prepare this dish:
  2. • Chop the garlic and set aside for later
  3. • In a frying pan, heat the olive oil.
  4. • Once its hot, fry the garlic.
  5. • As the ingredients are frying, chop the olives and the anchovies.
  6. • After a few minutes of frying, add the olives, anchovies, capers and tomaotoes Cook for twenty to thirty minutes until the mixture reduces down.
  7. • Serve on the spagetti, or penne.
  8. • This is a quick and easy meal, perfect after a hard day at work!
  9. Wine: Aglianico rosso.

Oh yeah, (I hit the enter key too soon) this sounds like it would be healthier then the tipical american way of preparing spagetti.

Alterations


I like to sometimes add raisins to the mix try a tablespoon with some pasta water with firm not raw pasta and let all the juices flavor the pasta as well. Also I like to start with pine nuts and let them brown a little before adding the liquid ingredients, and sometimes I finish with a few artichokes.

Great to use fresh summer tomatoes fresh from my organic garden.
