How to make it

  • The day before is when you'll need to start these.
  • In a saucepan, bring beer and butter to a boil.
  • When butter is melted, add flour and salt.
  • Cook over low heat, stirring constantly, until the mixture pulls away from the sides of the pan.
  • Remove from heat.
  • Preheat oven to 450°.
  • Beat eggs into beer-flour mixture, one at a time, until dough is shiny.
  • Drop by teaspoonsful about 1-inch apart on a lightly greased cookie sheet.
  • Bake 10 minutes.
  • Reduce oven temperature to 350° and bake an additional 10 minutes.
  • Remove from oven and let cool.
  • Split each puff with scissors and refrigerate until the next day.
  • Filling, also done the day before:
  • In a bowl, combine corned beef, onion, horseradish, mustard and mayonnaise.
  • Mix until well blended.
  • Cover and refrigerate overnight.
  • When ready, fill puffs with filling, place on platter and serve.
  • They will go quickly!!!!!
