Pinto Beans And Ham Hocks Recipe
For bean "Lovers". Good with fried chicken or pork chops, cole slaw, over rice and with cornbread or bisquits.

Ingredients
  • 3 smoked ham-hocks
  • 2 lbs dried pinto beans
  • 1/2 t garlic powder
  • ½ t crushed red pepper flakes
  • ¼ t pepper
  • ½ t salt
  • 2 t hot sauce
  • ½ medium onion, chopped
  • enough water to cover all

Directions
  1. Boil ham-hocks in enough water to cover on high heat for 45 minutes to an hour.
  2. Add all seasonings except hot sauce and onion.
  3. Continue boiling for 20 minutes.
  4. Add pinto beans and adjust water to cover if needed, hot sauce, and onion.
  5. Boil on medium heat for 2 hours until beans are done to taste.
  6. Note: To speed up cooking of beans and reduce the gas beans produce, soak beans in cold water overnight or bring to a boil; turn off the heat and let sit for 1 hour.
