Fried Potato Mini Cakes Recipe

Ingredients

1 c. left over mashed potatoes

1 c. sifted self-rising flour

1 egg

1/4 c. buttermilk

salt and pepper to taste

1 small onion, finely diced

1 T. butter or margarine

Directions

Saute' onion in butter until soft but not brown

Mix first 5 ingredients together and add saute'ed onion

Drop by tablespoonful onto a hot greased griddle

Smooth slightly with back of spoon

Cook for about 3 minutes each side.

makes about 15 mini cakes
