Fried Potato Mini Cakes Recipe
Ever wonder what to do with those left over mashed potatoes? Well, I found this way of using them up pretty easy, and tasty.

Ingredients
  • 1 c. left over mashed potatoes
  • 1 c. sifted self-rising flour
  • 1 egg
  • 1/4 c. buttermilk
  • salt and pepper to taste
  • 1 small onion, finely diced
  • 1 T. butter or margarine

Directions
  1. Saute' onion in butter until soft but not brown
  2. Mix first 5 ingredients together and add saute'ed onion
  3. Drop by tablespoonful onto a hot greased griddle
  4. Smooth slightly with back of spoon
  5. Cook for about 3 minutes each side.
  6. makes about 15 mini cakes

Those sound great, and I always seem to have left-over mashed potatoes. I've always ended up throwing them away, thanks for the idea!! I'll bookmark for the next time I have left-overs.
