How to make it

  • Saute' onion in butter until soft but not brown
  • Mix first 5 ingredients together and add saute'ed onion
  • Drop by tablespoonful onto a hot greased griddle
  • Smooth slightly with back of spoon
  • Cook for about 3 minutes each side.
  • makes about 15 mini cakes

    Those sound great, and I always seem to have left-over mashed potatoes. I've always ended up throwing them away, thanks for the idea!! I'll bookmark for the next time I have left-overs.
