Ingredients
  • 2 pounds chile-grind beef
  • 1 huge onion, chopped
  • 2 cloves garlic, minced
  • 2 pounds chopped, frozen green chile (I use hot)
  • 2 cans diced tomatoes, chopped fine in Cuisinart
  • 1 quart chicken stock
  • 2 large potatoes (red works best), cubed
  • 2 tsp. powdered red chile
  • 1 tsp. powdered cumin
  • Kosher salt to taste

Directions
  1. Saute onions and garlic in large pot. Add beef, cover and steam for 30 min. Add green chile and steam until thawed
  2. Add rest of ingredients and simmer for an hour or more.

Edited my recipe. I thought it needed
more tomato, so put in another can. A lot of
the different recipes don't even use tomato,
but I like it on occasion. Kind of cuts the hot
in the chile.

Sounds like a fit for our tastes. But we don't have frozen green chiles here in our stores, what would you substitute? I canned green chiles in a vinegar base with carrot and onion and that doesn't sound quite right. Suggestions?


You could probably use canned green chiles. They are usually available everywhere. The vinegar based chiles would probably not work. Hope you can find the canned. It would take a bunch of cans, however.

H-o-l-a! This is my kind 'a chile. We're making a pot today as frozen rain taps on the casita roof.


This is a good recipe. Like the chef said, you can make many variations on this theme. I like to roast and freeze my own green chiles. Should post some instructions. I'll search around first. If it's not here, I'll post it.


I love green chili and there aren't many recipes for it. Thanks so much for posting! YUM!!

Alterations


This is also very good using a very lean ground beef.


Really sounds delicious- I used lean organic ground beef and beef broth today. Added a splash of balsamic vinegar, and five cloves of garlic (we like garlic). Other than those changes, my recipe (I wing it, too) is very close to yours! :)


Next time I make this I shall try a splash of balsamic. Love it.
