Ingredients
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 1 ½ tsp ground cumin
  • 1 Tbs ginger root, finely grated
  • ¼ tsp ground cardamom (I use 3-4 whole cardamom pods)
  • 1 tsp cayenne pepper
  • 1 tsp salt
  • 1 cup red lentils
  • 3 cups hot water or broth
  • 2 Tbs tomato paste
  • 1 large tomato
  • Juice of 1 lime
  • Handful chopped cilantro

Directions
  1. Saute first group of ingredients until soft and fragrant.
  2. Add second group of ingredients.
  3. Bring to a boil. Reduce heat, cover, and simmer until lentils are tender, about 45 minutes. Remove cover and simmer over very low heat, stirring frequently, about 30 more minutes, until lentils are mushy and thick. You may need to add up to 2 cups more water as the lentils need to be very thick and soft.
  4. Just before serving add cilantro.
  5. Serve over rice.

Wow... the west indian way of making dhal is completely different from this :D Will certainly try it this way soon.


Love,love,love lentils. So good and so good for you. This combination of spices is right up my alley. Can't wait to get to the store for some fresh ginger, the only thing missing in my fridge/cupboard. Thanks for the post.
