- 1 large onion, diced shopping list
- 4 cloves garlic, minced shopping list
- 1 teaspoon ground turmeric shopping list
- 1 ½ tsp ground cumin shopping list
- 1 Tbs ginger root, finely grated shopping list
- ¼ tsp ground cardamom (I use 3-4 whole cardamom pods) shopping list
- 1 tsp cayenne pepper shopping list
- 1 tsp salt shopping list
- 1 cup red lentils shopping list
- 3 cups hot water or broth shopping list
- 2 Tbs tomato paste shopping list
- 1 large tomato shopping list
- juice of 1 lime shopping list
- Handful chopped cilantro shopping list
How to make it
- Saute first group of ingredients until soft and fragrant.
- Add second group of ingredients.
- Bring to a boil. Reduce heat, cover, and simmer until lentils are tender, about 45 minutes. Remove cover and simmer over very low heat, stirring frequently, about 30 more minutes, until lentils are mushy and thick. You may need to add up to 2 cups more water as the lentils need to be very thick and soft.
- Just before serving add cilantro.
- Serve over rice.
