Ingredients
  • 1 pkg. rice noodles (if using glass noodles, soak 5 minutes in cold water before using)
  • 1 c. pork/chicken/seafood
  • 3 tbsp. oil
  • 4 tbsp Chinese chive or spring onion
  • 1 tbsp. sugar
  • 2 tbsp. fish sauce
  • 2 tbsp. oyster sauce
  • 1 egg, beaten
  • handful bean sprout or cabbage
  • 3 tbsp. chopped garlic
  • 1 c. chopped yellow tofu
  • 1/2 c. water

Directions
  1. Put oil in wok with chopped garlic and fry until golden.
  2. Add meat, tofu and stir until meat is cooked.
  3. Add beaten egg.
  4. Add noodles, water (to make the noodles soft).
  5. Add fish sauce, oyster sauce, sugar.
  6. add bean spout and Chinese chives
  7. Turn off the heat
  8. Stir in fresh vegetables (cabbage, bean sprout, spring onion)
  9. Garnish with ground chillies and limes, to taste

I like the sound of this. I must try it, but do you suppose I could substitute the tofu with more meat?

Made this recipe a few days ago. It was very tasty. Omitted the meat and garnished with chopped peanuts, but otherwise followed the recipe. Thanks.


I love Pad Thai and used to eat tons of it in Bangkok. I will try it with glass noodles and small shrimps. 5 from me! :}
