Ingredients

How to make it

  • combine dry ingredients.
  • combine wet ingredients
  • mix together
  • the mixture will be quite watery
  • pour into a greased 9'' x 9'' pan
  • bake 50 min at 350' or until the top is springy
  • one batter makes 3 layers. the corn meal settles to the bottom. the bran rises to the top, and in the middle you will have a custardy layer.
  • sometimes I would add the extra honey and serve fresh strawberries on top.

    Tassajara Bread Book has been a "go to" for me since the late 1960's. So many fabulous recipes! This one is special. Follow recipe closely. May take a few tries to get defined layers, but will always taste great! Coarse corn meal to settle to bottom layer...egg custard to form middle layer...whole wheat to float to form top layer. Good luck! Try real maple syrup as a sweetener sometime. I think I'll make some now!

    I'm an old San Francisco hippie, and I've used Ed Brown's book since it first came out. Some nasty person stole my pristine copy (new one I found in a used book store) and probably sold it on Ebay. THis is one of my favorite Tassajara recipes.
