Three Layer Corn Bread Recipe
I use to make this many years ago when I could eat wheat..I hope you find it as good as I remember. The recipe come from the Tassajara Bread Book.

Ingredients
  • 1 cup corn meal ( course ground or stone ground works best)
  • 1/2 cup whole wheat flour
  • 1/2 cup unbleached white flour
  • 2 teasp. baking powder
  • 1/2 teasp. salt
  • 1 egg
  • 1/4--1/2 cup honey
  • 1/4 cup oil
  • 3 cups milk or buttermilk

Directions
  1. combine dry ingredients.
  2. combine wet ingredients
  3. mix together
  4. the mixture will be quite watery
  5. pour into a greased 9'' x 9'' pan
  6. bake 50 min at 350' or until the top is springy
  7. one batter makes 3 layers. the corn meal settles to the bottom. the bran rises to the top, and in the middle you will have a custardy layer.
  8. sometimes I would add the extra honey and serve fresh strawberries on top.

I'm an old San Francisco hippie, and I've used Ed Brown's book since it first came out. Some nasty person stole my pristine copy (new one I found in a used book store) and probably sold it on Ebay. THis is one of my favorite Tassajara recipes.
