African Couscous Peanut Stew

- 1 Tbsp peanut oil shopping list
- 1 Tbsp curry paste shopping list
- 1/2 c onion, diced shopping list
- 1 or 2 cloves garlic, minced shopping list
- 1/2 c yams, diced shopping list
- 2 c vegetable stock shopping list
- 1 - 398 ml (14 fl oz) can crushed tomatoes shopping list
- 1/4 c couscous, uncooked shopping list
- 1/4 tsp salt shopping list
- 1/4 tsp black pepper shopping list
- 1/4 tsp cinnamon shopping list
- 1/4 c crunchy peanut butter shopping list
- 1/4 c lite Cocunut milk shopping list
How to make it
- Heat 1/2 Tbsp of peanut oil in stock pot over medium high heat.
- Add curry powder and cook, stirring constantly for 1 min.
- Add onions and cook for 2 min, while stirring.
- Add garlic and cook for 1 more minute.
- Stir in yams, 1 1/2 cups vegetable stock and tomatoes.
- Bring to a boil. Simmer 20-30 minutes covered.
- In a large skillet or frying pan, heat remaining peanut oil. Add cinnamon and heat through.
- Add couscous and sear 1-2 mins.
- Add 1/2 cup vegetable stock and cook until couscous grains are soft.
- Season with salt and pepper.
- Add couscous, peanut butter and coconut milk to the stew. Stir until combined.
- Bring to a simmer and cook for 20 mins.
