How to make it

  • Preheat oven to 300F. Grease a 8inch fluted flan tin with removable base. Take a good sized square of baking paper and moisten. Line base and sides of tin with paper.
  • Put the whole almonds in a food processor until finely ground. Beat eggs and sugar for 10 minutes or until pale and fluffy. Stir ground almonds and baking powder. Puree the bananas with lemon juice then stir through almond mixture with the vanilla.
  • Pour into your tin and sprinkle over sliced almonds to cover the top. Bake for 40 to 50 minutes or until golden brown and a toothpick inserted in the centre comes out clean. Allow this to cool in the tin.
  • When ready to serve, dust with icing sugar and pass yoghurt separately.

    Hi cuntymunky, name says it all. Don't think banana almond cake would cause a brain tumor being two super foods. If you really do have brain tumor I suspect it's from something else.
    If you have lesions now, live your life to the full. A brain tumor is not a side effect of food you dick.

    ive made this twice now and am starting to develop tumors within the frontal lobes of my brain if anyone else is having strange side affects from these almond banna cakes i would appreciate a response also the tumor is melignant so make sure to be 100% sure the cake is worth cancerous antibodys attaking your nervous system, this is nuts (pun intended)

    I made this cake tonight and it is really delicious. I got mixed up between centigrade (normal for European recipes) and fahrenheit, and set the oven too hot. So top was a bit burned but still lovely. I double the amounts of vanilla and lemon in the recipe which worked well. Going to try it with some friends who are gluten intolerant as I think they will be OK with this

    Made this for a post-christening lunch today. Everyone loved it. So easy, but looks like you might have spent a lot of time baking. only problem was that I already started baking when I realized that I needed to figure out 250g. (don't have a scale). Oops. I think it turned out fine so I must have been close. Will make this again, but for breakfast so I can have it warm with a cup of coffee. Yum!
    Oh, and I made it in a regular spring-form pan as I did not have a fluted flan springform.
