Cool As A Cucumber Cumin Dip Recipe
I love cumin and cucumber together, it is great on rye krisp or with fresh veggie dippers. Adapted from the Low Carb life book by Fran McCullough

Ingredients
  • 1 package of room termperature cream cheese (8 oz)
  • 2 tbsp of heavy cream or more to thin
  • 1/2 cup of peeled seeded minced cucumbers
  • 1 tablespoon of chopped chives
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of white milled pepper
  • 1/2 teaspoon of cumin

Directions
  1. Mash the cream cheese with the fork until soft and add the other ingredients and mix well. Let stand for 45 minutes for flavors to meld. I upped the cumin from the original and added the pepper because I like pepper!

There is a polish salad I make with sour cream, cucumbers, salt, and heavy cream. The addition of cumin and cream cheese would be wonderful.
