Ingredients
  • 1 cup converted rice
  • 1 large or 2 med. eggs
  • 4 strips of bacon
  • 1 1/2 to 2 lbs. med. shrimp, cooked ,cleaned or thin strips of chicken
  • 1/4 tsp. salt
  • 1/4 tsp garlic powder
  • 1/8 tsp. pepper
  • 1/2 tsp ground ginger
  • 1 1/2 cup minced onion
  • 3 Tbsp. soy sauce

Directions
  1. Cook rice according to package directions; drain it.
  2. Fluff with slotted spoon.
  3. Spread on baking sheet
  4. Put into 350 F oven for 20 min.
  5. Cool
  6. Make thin omelet from the eggs.
  7. Cool & cut into thin strips.
  8. Fry bacon;cut into pieces
  9. Reserve 2 Tbsp. of drippings
  10. To the drippings, add split shrimp or chicken & condiments. Sautee and stir 5 min. over med.-high heat.
  11. Add onions.
  12. Sautee 5 min. more.
  13. Add cooled rice, egg strips, bacon and soy sauce.
  14. Cook and stir over med. heat 10 min. more
  15. Should serve 6 as main dish. Ship made gallons more so this was harder to down-size.

I've had this before at a soldier friend's house, but he wasn't on the Polk, he was given it by another soldier but can't trace it from there. Still, very delicious!
