How to make it

  • Cook rice according to package directions; drain it.
  • Fluff with slotted spoon.
  • Spread on baking sheet
  • Put into 350 F oven for 20 min.
  • Cool
  • Make thin omelet from the eggs.
  • Cool & cut into thin strips.
  • Fry bacon;cut into pieces
  • Reserve 2 Tbsp. of drippings
  • To the drippings, add split shrimp or chicken & condiments. Sautee and stir 5 min. over med.-high heat.
  • Add onions.
  • Sautee 5 min. more.
  • Add cooled rice, egg strips, bacon and soy sauce.
  • Cook and stir over med. heat 10 min. more
  • Should serve 6 as main dish. Ship made gallons more so this was harder to down-size.

    I've had this before at a soldier friend's house, but he wasn't on the Polk, he was given it by another soldier but can't trace it from there. Still, very delicious!
