Great appetizer. Two large pecan halves sandwiched with filling of cream cheese, Roquefort cheese, and mayonnaise. Simple, nutty, cheesy, good!

Ingredients
- LARGE pecan halves, example: (40 halves to make 20 stuffed pecans)
- Cream cheese (amount is your choice)
- Roquefort cheese (amount is your choice)
- Mayonnaise (just enough to blend the cheeses)
- NOTE: may add cayenne, chili powder, cumin, or rosemary
Directions
- In large bowl, beat softened cream cheese, Roquefort cheese, and a little mayonnaise until creamy, not runny
- May add at this time cayenne, chili powder, cumin, rosemary, garlic, or your favorite herb
- Mix again if spice or herb is added
- Take two halves and stuff with filling (like a sandwich)
- Refrigerate until ready to serve
- The filling will harden slightly in the refrigerator
