Fudge Puddles Recipe
This is a yummy recipe, very simple and they turn out looking great (for those of you, like me, whose baking rarely ends up looking picture perfect). Kids and adults will love them!

  • Dough...
  • Ingredients:
  • 1/2 c. butter or margarine, softened
  • 1/2 c. creamy peanut butter
  • 1/2 c. sugar
  • 1/2 c. packed light brown sugar
  • 1 egg
  • 1/2 tsp. vanilla extract
  • 1 1/4 c. all-purpose flour
  • 3/4 tsp. baking soda
  • 1/2 tsp. salt
  • Fudge filling...
  • Ingredients:
  • 1 c. (6 ounces) milk chocolate chips
  • 1 c. (6 ounces) semi-sweet chocolate chips
  • 1 14-ounce can sweetened condensed milk
  • 1 tsp. vanilla extract
  • Chopped nuts or peanut butter chips, or any topping you choose

Directions
  1. To make cookies
  2. In a mixing bowl, cream butter, peanut butter, and sugars; add egg and vanilla.
  3. Stir together flour, baking soda and salt; add to creamed
  4. mixture, mix well.
  5. Chill. Shape into 48 balls, 1 inch each. Place in lightly greased mini-muffin tins.
  6. Bake at 325 degrees for 14-16 minutes or until lightly browned. Remove from oven and immediately make "wells" in the center of each by lightly pressing with a melon baller (or similar instrument). Cool in pans for 5 minutes, and then carefully remove to wire racks.
  7. To fill
  8. Melt chocolate chips in a double boiler over simmering water.
  9. Stir in condensed milk and vanilla; mix well.
  10. Using a small pitcher or
  11. pastry bag, (I find a measuring tablespoon works great) fill each shell with filling. Sprinkle with peanuts (or topping choice). Makes 4 dozen.

Perfect sounding to me - how can you miss with peanut butter cookies and a fudgey filling? These will have to be tested BEFORE the holidays!
