Upper Crust Chicken

- 12 slices of day-old white bread shopping list
- 3 cups cooked and cubed, boneless, skinless chicken breast shopping list
- 1 cup coarsely chopped celery shopping list
- 2 cups shredded sharp cheddar cheese shopping list
- 1 cup mayonnaise shopping list
- 2 eggs, slightly beaten shopping list
- salt and pepper to taste shopping list
- 1 teaspoon poultry seasoning shopping list
- 2 cups milk shopping list
- butter shopping list
How to make it
- Trim the crusts from the bread and set aside.
- Cut the bread into diagonal quarters.
- Cut crusts into cubes.
- In a bowl, combine crust cubes, chicken, celery and 1-3/4 cups cheese.
- Mix well.
- Butter an 11x7 baking dish.
- Spoon chicken mixture into baking dish.
- Arrange bread quarters over top chicken mixture.
- In a bowl, combine mayonnaise, egg and seasonings.
- Mix well.
- Gradually add the milk and mix well to blend.
- Pour over bread.
- Sprinkle with remaining cheese.
- Cover and refrigerate over night.
- Bake, uncovered, at 375° for about 30 minutes, until hot and bubbly.

This dish was absolutely delicious. My husband had this year's ago and asked my to make it after finding the recipe on this site. I was hesitant but decided to try it and I am glad I did. We really enjoyed it and I will definitely make this again.
