This is a simply made chicken dish that turns out like a cheesey chicken and stuffing dish.

Ingredients
  • 12 slices of day-old white bread
  • 3 cups cooked and cubed, boneless, skinless chicken breast
  • 1 cup coarsely chopped celery
  • 2 cups shredded sharp cheddar cheese
  • 1 cup mayonnaise
  • 2 eggs, slightly beaten
  • salt and pepper to taste
  • 1 teaspoon poultry seasoning
  • 2 cups milk
  • Butter

Directions
  1. Trim the crusts from the bread and set aside.
  2. Cut the bread into diagonal quarters.
  3. Cut crusts into cubes.
  4. In a bowl, combine crust cubes, chicken, celery and 1-3/4 cups cheese.
  5. Mix well.
  6. Butter an 11x7 baking dish.
  7. Spoon chicken mixture into baking dish.
  8. Arrange bread quarters over top chicken mixture.
  9. In a bowl, combine mayonnaise, egg and seasonings.
  10. Mix well.
  11. Gradually add the milk and mix well to blend.
  12. Pour over bread.
  13. Sprinkle with remaining cheese.
  14. Cover and refrigerate over night.
  15. Bake, uncovered, at 375° for about 30 minutes, until hot and bubbly.

Hi-Good recipe. Instead of the milk I use chicken broth...my family loves this recipe. I have also used left over turkey in place of the chicken.
