Cinnamon Breakfast Puffs Recipe
These are wonderful for Sunday breakfast with coffee and the newspaper.

Ingredients
  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1 large egg
  • 1/2 cup milk
  • 1-1/2 cups all-purpose flour
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • Topping:
  • 1/4 cup butter
  • 1/2 cup sugar
  • 1 teaspoon ground cinnamon

Directions
  1. In a mixing bowl, cream butter and sugar.
  2. Beat in egg and milk
  3. In a separate bowl, combine flour, baking powder, salt, and nutmeg.
  4. Mix well.
  5. Stir into creamed mixture.
  6. Batter will be stiff.
  7. Fill greased or paper-lined muffin cups 2/3 full.
  8. Bake at 350° for 15-20 minutes or until cake test is done.
  9. Meanwhile, melt butter.
  10. In a bowl, combine sugar and cinnamon.
  11. Remove muffins from oven and muffin tin.
  12. Immediately dip tops into butter and then cinnamon sugar.
  13. Serve warm.

Great idea to dip the muffins in the butter & cinnamon & sugar after they bake. I have problems with the topping burning when it's put on before you bake them. This trick would solve that problem! Thank you for sharing it.
