Hot Sausage Breakfast Casserole Supreme Recipe
This recipe came from an estate sale. I obtained it when I purchased the family collection from the Evans Estate in Arlington, Texas in 1989.

Ingredients
  • 1/2 stick butter
  • 1 small sweet onion chopped
  • 1 small green pepper chopped
  • 3 medium tomatoes chopped
  • 24 ounce bag frozen hash brown potatoes
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 12 eggs beaten
  • 1 pound hot breakfast sausage cooked crumbled and drained
  • 3 cups cheddar cheese shredded

Directions
  1. Melt butter and place in rectangular baking pan.
  2. Spread potatoes in bottom of pan.
  3. Sprinkle chopped vegetables over potatoes then add salt and pepper.
  4. Sprinkle meat over potatoes and vegetables.
  5. Pour beaten eggs over potatoes then bake at 350 for 45 minutes.
  6. Remove from oven and sprinkle cheese evenly over top and bake 5 minutes longer.
  7. Remove from oven and let set for approximately 5 minutes then cut into squares.
