How to make it

  • Preheat oven to 400.
  • Coat rectangular baking dish with cooking spray.
  • Combine squash, onion, chiles, jalapenos, salt and 3/4 cup cheese in a large bowl.
  • Sprinkle with flour and toss to coat.
  • Spread mixture in the prepared baking dish and cover with foil.
  • Bake for 45 minutes.
  • Spoon salsa over the casserole and sprinkle with remaining cheese.
  • Bake uncovered for 30 minutes.
  • Sprinkle with scallions and red onion.

    This was delicious. We used fresh roasted New Mexico green chile rather than the cans of chile/jalapenos and it was really HOT and delicious. Also skipped the scallions on top - didn't have and it didn't need.
