An extremely simple chicken enchilada recipe made with frozen taquitos. Anyone can make this as its just that easy.

I made this the other night but made two layers of taquitos in my pan. The finished dish was more like a green chile soufflee, rich and light and honestly, it was better than the original recipe.
*Make your first layer of taquitos in the pan.
Sprinkle with chopped onions, drained and chopped, canned mild green chiles.
Then using a tablespoon, add large dollops of sour cream over the first layer and then sprinkle with Monterey Jack cheese.
Add the next layer of taquitos and repeat the layers. You can add the sour cream after you have baked the "casserole" and then pour your mild or medium GREEN enchilada sauce over the top! Bake and serve with a dollop of sour cream or more if you wish. This was delicious. If I hadn't made it, I never would have known that the main product was a box of frozen chicken taquitos. The sour cream seems to blend right into the corn tortillas. YUMMY!
