How to make it

  • Sauté onion, bell pepper, and garlic in hot oil in Dutch oven over medium-high heat until tender.
  • Add beans (with liquid) and next 4 ingredients; bring to a boil.
  • Cover, reduce heat, and simmer until beans are tender, about 20mins.
  • Remove 1cup of beans and blend, then return to pot.
  • Stir and simmer until beans have thickend.
  • Discard bay leaf.
  • Serve over hot cooked rice; sprinkle with chopped green onions.
