This recipe is adapted from a "Southern Living" Recipe I found online. I made it for my cuban Mother-in-law's 62nd Birthday party, and everyone loved it. I practically licked my plate myself... I think I'm an official Cuban now! :)

Ingredients
  • 3 15oz cans of Organic no-salt Black Beans *do not drain liquid!!
  • 1 medium onion, chopped
  • 1 small green bell pepper, chopped
  • 3 garlic cloves, pressed
  • 3 tablespoons olive oil
  • 1 tablespoon white vinegar
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 bay leaf
  • Hot cooked rice
  • Chopped green onions

Directions
  1. Sauté onion, bell pepper, and garlic in hot oil in Dutch oven over medium-high heat until tender.
  2. Add beans (with liquid) and next 4 ingredients; bring to a boil.
  3. Cover, reduce heat, and simmer until beans are tender, about 20mins.
  4. Remove 1cup of beans and blend, then return to pot.
  5. Stir and simmer until beans have thickend.
  6. Discard bay leaf.
  7. Serve over hot cooked rice; sprinkle with chopped green onions.

Alterations


This sounds great.

If you add just about a tsp of baking soda or a bit of fresh ginger, it will kill any of the gassy side-effects from beans. This will work with any bean recipe.
