Cream Of Potato Soup Recipe

One of our favorites on a cold day. I always fix a pan of cornbread with this soup. It is a real comfort food.

Ingredients
- 3 cups Diced Potatoes
- 2 stakes of Celery
- 1 small onion
- 1 cup water
- 1 Teaspoon Salt
- 1 Teaspoon Parsley Flakes
- 1/8 Teaspoon Pepper
- 1 Teaspoon Instant Chicken Bullion Granules
- 2 Cups Milk
- 3 Tablespoons Flour
- 3 Tablespoons Butter
Directions
- Combine potatoes, celery, onion, water, seasonings, and bullion in a 2 qt. saucepan.
- Bring to a boil and cook covered for 13 to 16 minutes, or until potatoes are tender.
- Combine 1/4 cup milk with flour until smooth.
- Add flour mixture, remaining milk, and butter to potatoe mixture.
- Cook over medium heat until mixture boils, stirring constantly.
- If i have left over ham I will add it to soup.

This is a pretty good soup, but I've found that if I saute some veggies (carrots, celery, onion) in a little olive oil and add to the potatoes, and make a roux with a little butter and flour and cook out that raw taste, then add the milk or better yet, half and half, then when it thickens add that to the soup, it is even richer. If calories and cholesterol aren't an issue, add about 1/2 stick of real butter and you will think you've died and gone to heaven. I tried it and it's the best and pretty easy too!

I added chopped Kale and shredded Bacon, made some great touches !
