LOBSTER NEWBURG

- 1/4 cup REAL butter shopping list
- 2 tablespoons flour shopping list
- 1/4 teaspoon salt shopping list
- 1/4 teaspoon nutmeg... I like less shopping list
- 1/2 teaspoon paprika shopping list
- 1 cup heavy cream shopping list
- 3 egg yolks, slightly beaten shopping list
- 2 cups coarsley chopped boiled lobster... I have used grilled also. shopping list
- 2 tablespoon GOOD DRINKING sherry shopping list
- 3 cups cooked white rice shopping list
How to make it
- Melt butter in top of double boiler, over direct heat.
- Remove from heat
- Stir in slour to make smooth mixture
- Add salt, nutmeg and paprika
- Gradually stir in cream
- bring to boiling, stirring
- Reduce heat and simmer while stirring 3 minutes longer
- Stir a little of hot mixture into eggs to temper, then pour all back into top of double boiler.
- Add lobstr, and cook over hot water stirring until mixture is thinened and lobster is hot... about 10 minutes..DO NOT BOIL
- Stir in sherry. Serve over rice..
- This is so rich... and good...
