How to make it

  • Melt butter in top of double boiler, over direct heat.
  • Remove from heat
  • Stir in slour to make smooth mixture
  • Add salt, nutmeg and paprika
  • Gradually stir in cream
  • bring to boiling, stirring
  • Reduce heat and simmer while stirring 3 minutes longer
  • Stir a little of hot mixture into eggs to temper, then pour all back into top of double boiler.
  • Add lobstr, and cook over hot water stirring until mixture is thinened and lobster is hot... about 10 minutes..DO NOT BOIL
  • Stir in sherry. Serve over rice..
  • This is so rich... and good...

    On of my favorite seafood dishes - definitely rich, but the flavor is exceptional...can't beat this one - I will have to try it next time I can get my hands on some lobster.
