LOBSTER NEWBURG Recipe
This is another recipe from the old McCalls Cookbooks and recipe club.. 1970 ERA, It is WONDERFUL --SINFUL

Ingredients
  • 1/4 cup REAL butter
  • 2 tablespoons flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg... I like less
  • 1/2 teaspoon paprika
  • 1 cup HEAVY cream
  • 3 egg yolks, slightly beaten
  • 2 cups coarsley chopped boiled lobster... I have used grilled also.
  • 2 tablespoon GOOD DRINKING sherry
  • 3 cups cooked white rice

Directions
  1. Melt butter in top of double boiler, over direct heat.
  2. Remove from heat
  3. Stir in slour to make smooth mixture
  4. Add salt, nutmeg and paprika
  5. Gradually stir in cream
  6. bring to boiling, stirring
  7. Reduce heat and simmer while stirring 3 minutes longer
  8. Stir a little of hot mixture into eggs to temper, then pour all back into top of double boiler.
  9. Add lobstr, and cook over hot water stirring until mixture is thinened and lobster is hot... about 10 minutes..DO NOT BOIL
  10. Stir in sherry. Serve over rice..
  11. This is so rich... and good...

Love this recipe!!!


On of my favorite seafood dishes - definitely rich, but the flavor is exceptional...can't beat this one - I will have to try it next time I can get my hands on some lobster.
