Ingredients

How to make it

  • Heat oil in large skillet over medium heat.
  • Add garlic, turkey and whites of the green onions.
  • Saute until meat is no longer pink.
  • Add salt, cinnamon, red pepper and salsa to meat mixture.
  • Drain and transfer to bowl.
  • Let cool while moving onto the next step.
  • Roll pie crusts to half the original packaged depth.
  • Cut into rounds. (I use a peanut container lid)
  • Add cheese to meat mixture.
  • Fill rounds with meat but allow room to fold pastry in half to form a crescent shape.
  • Seal empanada edges shut with fork tine imprints.
  • Brush top side with egg.
  • Bake at 425 (for gas ovens) 375 (for electric ovens) for 20 min.
  • Serve with salsa, fat free sour cream or guacamole. Or all three!!

    Believe it or not I grew up on empanadas. My step-grandmother was from Santiago, Chile. Hers were wonderful, but I never got her "secret" recipe. Yours sounds healthy and like a fun and adventurous project. I'll print the recipe and save it for a rainy day. Thanks:)
