Ingredients
  • 2 refrigerated pie crusts
  • 1 Tbsp olive oil
  • 2 Tbsp garlic, minced
  • 1 lb ground turkey
  • 4 green onions, sliced (save chives for garnish)
  • pinch of salt
  • 1/4 tsp cinnamon (crucial ingredient!!)
  • 1 tsp red pepper flakes
  • 3/4 c salsa, drained as much as possible
  • 1/2 c. light cheddar, shredded
  • 1 egg, beaten (for glaze)

Directions
  1. Heat oil in large skillet over medium heat.
  2. Add garlic, turkey and whites of the green onions.
  3. Saute until meat is no longer pink.
  4. Add salt, cinnamon, red pepper and salsa to meat mixture.
  5. Drain and transfer to bowl.
  6. Let cool while moving onto the next step.
  7. Roll pie crusts to half the original packaged depth.
  8. Cut into rounds. (I use a peanut container lid)
  9. Add cheese to meat mixture.
  10. Fill rounds with meat but allow room to fold pastry in half to form a crescent shape.
  11. Seal empanada edges shut with fork tine imprints.
  12. Brush top side with egg.
  13. Bake at 425 (for gas ovens) 375 (for electric ovens) for 20 min.
  14. Serve with salsa, fat free sour cream or guacamole. Or all three!!

Believe it or not I grew up on empanadas. My step-grandmother was from Santiago, Chile. Hers were wonderful, but I never got her "secret" recipe. Yours sounds healthy and like a fun and adventurous project. I'll print the recipe and save it for a rainy day. Thanks:)

Alterations


Make a really tasty Pie Crust for Empanadas
8 oz unsalted butter
6 oz cream cheese
2 cups unbleached all-purpose flour
1/2 teaspoon of sea salt
1 large egg To Brush on Empanadas before baking
Beat together the Butter and Cream Cheese until well blended, Stir in the flour and salt and mix well. Knead the dough until it holds together and formed into a ball. Wrap in plastic wrap and refrigerate for15 minutes.

Roll it out until it is 1/8 inch thick and make your rounds as you normally would.
