Wild Rice Salad Recipe
A household favorite-I like to serve croissants and melon with it. Recipe calls for chilling but just as tasty warm!

Ingredients
  • 1 C uncooked wild rice
  • Seasoned salt, optional
  • 2C diced cooked chicken
  • 1 1/2 C halved red grapes
  • 1C water chestnuts, drained
  • 3/4 C light mayonnaise
  • 1C cashews

Directions
  1. Cooke rice according to package directions, omitting salt or substitutine seasoned salt if desired
  2. Drain well; cool to room temperature
  3. Spoon into a large bowl; add chickengrapes, water chestnuts and mayonnaise
  4. Toss gently with a fork
  5. Cover and Chill
  6. Just before serving toss in cashews
  7. Prep time is increased and varies by the chill time- Please be aware of this

Reminds me of my growing up days when my Grandmother made this, the only thing different is she would put mushrooms in it. Funny how I was just thinking of this the other day. Can't wait to make it again. I give it a 5:)
