What happened to all the old comfort food from the 70's? I'v been diggin and found a treasure box of McCalls recipe collection cards... I learned to cook from lots of these old recipes.. Hope you enjoy the memories. Cooking time varies...

Ingredients
  • 2 racks of spareribs about 4 pounds
  • 1/4 teaspoon salt
  • 1/2 cup butter
  • 1/2 cup chopped onions
  • 1/2 cup chopped green pepper
  • 1 can cream style corn... (8oz)
  • 1/2 cup milk
  • 1/2 teaspoon dried marjoram leaves
  • 1 package cornbread stuffing mix
  • 3/4 cup bottled bbq sauce..

Directions
  1. Preheat oven to 350f
  2. wipe ribs with damp paper towels
  3. trim by cutting strip from bottom of ribs making each rack 7 inches all the way across, save the trimmings.. I have butcher do this.
  4. Shape the racks into a standing crown, with meaty side of ribs facing out.
  5. fasten with skewers or wooden picks... soak wooden picks in water!
  6. Sprinkly with salt
  7. Line a small roasting pan with heavy duty foil
  8. Place crown in pan, tuck reserved trimmings inside crown against the ribs.
  9. Add 2 cups water to pan..
  10. Roast covered with foil for 1 1/4 hourss
  11. while that is roasting... in the butter in a large skillet, saute onion and green pepper until tender.. about 5 min.
  12. stir in corn, milk and seasonings, bring to boil.
  13. Remove from heat and add stuffin mix.
  14. Stir until moistened..
  15. Set aside..
  16. Remove roast from oven.
  17. Pour off pan drippings, reserving 1/2 cup. Stir this into the stuffing.
  18. Brush entire roast with some of the bbq sauce, spoon stuffing into center.
  19. cover ends of ribs with foil.
  20. Roast, basting occasionally with bq sauce, 35-45minutes longer, or until ribs are browned and glazed.
  21. To keep stuffing intact... lift ENTIRE foil lining of pan to serving platter,
  22. remove the foil top, and carefully tear off the foil that shows around the base of crown...
  23. Garnish with fresh parsley around the bottom... and you can make little paper crowns to go on end of ribs if you want..
  24. Makes an impressive meal for company!
  25. Enjoy..

I think I had that same collection, Linda - came monthly, stored in a large oversized plastic recipe box??? I, too, found some real keepers in that collection - I'm so glad you found yours!!
