Lentil Feta Salad Recipe

Ingredients
  • 1 cup Du Puy lentils
  • 3 Tbs olive oil
  • 2 Tbs lemon juice
  • salt and pepper
  • 1/2 cup chopped parsley
  • 1/4 - 1/3 cup chopped mint leaves
  • 1/2 red onion, chopped
  • 1 med. cucumber, chopped
  • 1/2 - 3/4 cup feta cheese, crumbled

Directions
  1. Put lentils in a pot with 1 1/2 cups water and bring to a boil
  2. Reduce heat and simmer 15 - 20 min. Until they are al dente
  3. Whisk together olive oil, lemon juice, salt and pepper while lentils are cooking
  4. When finished, strain, set aside and pour dressing over and allow to cool
  5. Add herbs, onion and cucumber and stir together
  6. Top with feta and garnish with mint
  7. Enjoy

This is a tasty salad. It won't win any prizes for looks, but I've made it about 4 times because it tastes to good. Sometimes we make a cold burrito out of it.

Just like what I make out of leftover lentils and rice and taboulleh salad! minus the cucumber. I'll put cukes in next time, if on hand!- a 5 I know!
