Lentil Feta Salad

- 1 cup Du Puy lentils shopping list
- 3 Tbs olive oil shopping list
- 2 Tbs lemon juice shopping list
- salt and pepper shopping list
- 1/2 cup chopped parsley shopping list
- 1/4 - 1/3 cup chopped mint leaves shopping list
- 1/2 red onion, chopped shopping list
- 1 med. cucumber, chopped shopping list
- 1/2 - 3/4 cup feta cheese, crumbled shopping list
How to make it
- Put lentils in a pot with 1 1/2 cups water and bring to a boil
- Reduce heat and simmer 15 - 20 min. Until they are al dente
- Whisk together olive oil, lemon juice, salt and pepper while lentils are cooking
- When finished, strain, set aside and pour dressing over and allow to cool
- Add herbs, onion and cucumber and stir together
- Top with feta and garnish with mint
- Enjoy

This is a tasty salad. It won't win any prizes for looks, but I've made it about 4 times because it tastes to good. Sometimes we make a cold burrito out of it.

just like what I make out of leftover lentils and rice and taboulleh salad! minus the cucumber. I'll put cukes in next time, if on hand!- a 5 I know!
