Lime Grilled Chicken With Kiwi Salsa Recipe

Ingredients

Chicken Marinade:

1/2 C lime juice

1/4 C olive oil

2 TBSP honey

1tsp thyme

1 tsp rosemary

1 garlic clove, crushed

4 chicken breasts, boneless, skinless

Kiwi Salsa:

2 TBSP lime juice

1 TBSP oilive oil

(optional) 1 jalapeno pepper, seeded and minced

1 tsp honey

1 garlic clove, crushed

1 tsp curry

1 tsp cumin

hot pepper flakes to taste

6 kiwi fruit, peeled and chopped

1 small onion, peeled and diced

Directions

Mix Marinade and place in a ziploc bag with chicken. Put in fridge and marinade for at least 1 hour. (I usually do overnight! sometimes my honey doesn't mix well, so I soften it in the microwave for a few seconds)

Mix salsa ingredients in small bowl. Add kiwi and onion. Stir gently and let stand at room temperature for one hour (can also be made ahead, just refrigerate and bring out an hour before you plan to eat)

Grill chicken on BBQ or broil in the oven 5-7 mins per side.

Serve with kiwi salsa on the side or dolloped on top. Can also be put into ramekins for dipping! Enjoy!

***I like to serve this with rice. After chicken is done marinading, I boil the marinade for about 2-3 minutes on the stove and use it as a sauce for the rice. It's fantastic.......
